It’s a grey and gloomy day here in the Dot even if the warm weather is fairly appealing. Days like today are the ones that I have trouble maintaining focus and staying alert, and the fact that it’s Monday and the week of work is just beginning for most isn’t exactly the most encouraging either.
My quick fix strategy is a green smoothie. Credits go to Lisa-Marie, she’s a host for the website and Youtube channel “BodyRock TV” which specializes in home workouts. I found out about this recipe a long time ago when I was working in the summer, it was the perfect refreshment before a workout or a long day out in the sun at work (I was a lifeguard). Given the convenience of my Magic Blender it was also fun and easy to make. I’m a big believer in eating for energy, the infamous “food coma” serving as a great reason why you should watch what you’re putting in your body, especially if you have a long day and/or week ahead of you.
Here’s the recipe:
-handful of spinach
-2 tbsp plain Greek yogurt
-1/4 of a cucumber
-handful of mint leaves
-handful of frozen mango cubes or fresh cut honeydew (the honeydew makes for a sweeter smoothie but the mango is more cost efficient and makes for multiple servings)
-1/2 scoop of protein powder (I use the PC soy kind)
-couple splashes of lemon, lime, apple or pomegranate juice
-Avocado (optional but makes it smoother-tasting)
-couple ice cubes
If you want to really spruce it up garnish with a couple mint leaves and lime wedges. What I like to do if I have some place to go is get one of those Starbucks smoothie travel cups because this smoothie lasts for quite a while and the nutrients from both fruits and vegetables keep you going a long time. Not to mention it may serve as a substitute for another unnecessary, empty calorie caffeinated beverage. Try it out and Happy Monday!
